To actually forage you want to use the magnifying glass icon on the left hand side of your screen. Also you don't need a tree branch, you can use any old plank of wood and craft it into a spear from the crafting menu. I cut down trees and saw the logs. You can find bugs at level 4, and more at level 6 I think. Grasshoppers, cockroaches, crickets, and worms. Not sure at which level you can find worms. All of the above are 100% disabled in winter though. In winter all you find is wood and stones. I've not tried fishing with anything but the spear.
